Easy Ways to Eat More Vegetables

How many vegetables do you eat daily? This post is short and sweet, but I’ll cover all the easy ways to eat more vegetables, so you can get the vitamins, minerals and fibre requirements.

If you don’t reach the recommended 3-5 serves per day, then this post is for you!

Start by eating the vegetables you like.

I know it can be tempting to list vegetables from ‘best’ to ‘worst’ as far as benefit is concerned (broccoli, for example). You don’t need to eat the ones you don’t like!

Start by eating your favourite, however it suits you to eat them. Take the pressure of yourself. I personally grab whichever ones I feel like at the market on Sunday, chop them all up and put them in a massive bowl, and I throw 1-2 cups in for both lunch and dinner.

Easy Ways to Eat More Vegetables

Mix your veggies into other foods/meals you love.

Do you love mashed potato, beef mince, stew, soup? Chop the veggies up finely and add them in there. I always mash my cauliflower and broccoli into my sweet potato, as that way you can hardly taste it!

Avoid over-cooking your veggies.

Overcooked veg can taste really bitter, not to mention get really soggy. I fry mine on the frypan or if not being cooked fresh, make sure they are in a delicious sauce!

Incorporate them into a snack.

Celery is really great with peanut butter, and carrots really great with dips. You could easily get one cup of veggies in with a snack like this.

Buy them organic.

Yes, everyone says there is no difference between normal and organic, and that organic is ‘too expensive’. Not the case, as the organic vegetables are higher in nutrient content, thus flavour, and stay fresh longer, so you’re less likely to have all the veggies you bought on Sunday too soggy to eat by Monday.

Those are my simplest tips to increase veggie intake! Of course there are more, like adding your favourite sauces, but this depends on what your goals are
